It is now clear that the uniqueness and typicity of a wine come from its connection to its terroir, and there is no reason to give that up by using chemicals that suppress its character and distinctiveness. This awareness has led us to adopt a more mindful and respectful approach to agriculture, and consequently to organic farming. We’ve returned to traditional agricultural practices, including green manuring, manual harvesting, and acconciatura (a vine training technique), all of which help maintain the perfect balance between the plant and its environment, allowing it to express itself at its best.
