THE CELLAR

The Three Cellars

Dianella’s cellars can be found underneath the villa and park. The renovation of the historical cellars was done with great care to respect the original aesthetic and function of the rooms, but with an eye to modernise the spaces with the most cutting edge technologies available. The result is an operational space where contemporary practices interact with the historical cellars, now transformed into a museum. Each plot of the vineyard is harvested separately. Once the grapes have been harvested, they are brought to the cellar where the process of vinification begins in small steel tanks, with a careful control of the fermentation process while still maintaining the unique characteristics of each separate plot. At the end of the fermentation process, the wines are transferred to the Concrete Cellar for the second fermentation, following by the final stage of ageing in varying sizes of wooden barrels or French barriques of aged oak. Throughout the process the wines are monitored frequently with lab tests, even during the final perfecting of the wines once bottled, where they are kept in a carefully controlled environment before they arrive at their final destination.

The Concrete Cellar

The construction of the new steel cellar was completed in the early 1970s, connecting the production area where the harvested grapes arrive with the underground cellar, which is still in use for the ageing of the wines. Beginning in the 1990s, Dianella has made many investments in winemaking technology, culminating in the complete refurbishment of the concrete cellar in 2012, which is fundamental for the maturation process as the wines pass from steel to wood.

The Barrel Cellar

The new barrel cellar lies within the historic cellars where you can still see the original wooden ageing vats. Due to the narrow access to the cellars, the barrel makers from Garbellotto spent days inside constructing them. The cellar is equipped with a state of the art system to maintain a constant temperature of 16/18 degrees Celsius and a humidity of approximately 85%.

The Barrique Cellar

The barrique cellar uses the same advanced temperature and humidity controls. The barrique are made from aged oak, produced by the best French barrel makers.
